Opening for the 2008 Fall Term, the University of Michigan’s new Hill Dining Center articulates the marketplace concept in campus dining, featuring state-of-the-art display cooking and preparation of a variety of innovative, fresh cuisine.
The visually dynamic design creates an open, airy setting with large glass windows overlooking Palmer Field and much of Central Campus. Here, students can enjoy a variety of freshly made cuisine from a marketplace dining area on the lower level, or from the food emporium located on the upper, plaza level.
Marketplace features six service stations: a hearth oven for pizza; a rotisserie and Euro kitchen offering traditional fare; an international concept with a wok station and flat top grills to provide food from around the world; made-to-order deli sandwiches and salads; a dessert and coffee bar, and a grill with burgers, fries and more.
Marketplace seats up to 638 people in various arrangements: booths, counters with stools, as well as 2-, 4- and 6- chair tables. The area also includes a separate dining room for up to 28 people, which can be reserved for special functions.
The Victors food emporium – a blend of restaurant and convenience store that makes it possible to offer extended hours economically – features grab-and-go salads and sandwiches, pizza, smoothies, gourmet coffee, bottled beverages and a variety of convenience items. Victors provides seating for 72 patrons, including Marketplace diners, with early morning to late night hours of service. Victors also has outdoor seating on the adjacent patio. The plaza is open 24 hours as a student lounge.
